Bruschetta Trinity (3 Types of Bruschetta)- A toasted baguette slice topped with finely diced tomato, onion, and carrot, drizzled with a balsamic glaze. Another baguette slice spread with basil pesto and topped with chopped sundried tomatoes. The third features melted brie cheese and sweet red grapes, finished with a balsamic glaze.
Freshly Caught & Lightly Seared Yellowfin Tuna Sashimi- Caribbean-caught fillets, soaked in a chili soy sauce, then lightly seared and thinly sliced. Served with a side of spicy sriracha mayo and finely diced green onions, garnished with a touch of salt and a drizzle of balsamic glaze.

BBQ Jerk Pork Chop with Garlic Butter Mashed Potatoes- Served alongside dauphinoise potatoes, baked in a creamy mushroom sauce and garnished with paprika. Complimented by a light apple, cranberry, and walnut salad, dressed with a honey and olive oil balsamic vinaigrette.
Beef Wellington- Seared beef tenderloin wrapped in puff pastry, lined with duxelles (a mixture of finely diced, sautéed mushrooms). Served with sautéed garlic butter carrots, zucchini, and turnip, and complemented by a rich demi-glace red wine sauce.

Thomas was born in South Africa and raised in the coastal town of Langebaan, where his love for the ocean took root. Spending most of his days either surfing or on a boat, he quickly developed a deep connection to the water.
From an early age, he knew that sailing was his calling. Determined to pursue it as a career, he made sure to get all his paperwork in order and saved up as much as he could to make his way to the Caribbean. Just a week after graduating high school, he was already on a plane to begin his first job.
Since 2018, he has been exploring the Caribbean and other parts of the world, but he now calls the British Virgin Islands (BVI) home. Having sailed these waters extensively, he knows all the hidden gems and favorite spots, offering unforgettable experiences to his guests no matter the weather.
His career has spanned multiple companies, allowing him to gain valuable experience in a wide variety of settings. He has worked on everything from award-winning luxury catamarans to fun, pirate-themed day cruisers.
As a certified Dive Master with a passion for marine life, he is always eager to share his love for the ocean with others. Down-to-earth and adventurous, he considers himself lucky to be living his best life in the Caribbean, where his greatest joy is creating memorable experiences for his guests.
Chef Johann
Johann was born in Bloemfontein, Free State Province, South Africa, Johann’s journey into the culinary and yachting worlds began in unexpected ways. His heritage traces back to Dutch settlers who arrived in the late 1700s, and growing up in a bilingual household, he became fluent in both English and Afrikaans. Johann’s passion for cooking was sparked early, learning from his mother in the family kitchen. While he didn’t grow up sailing, annual family trips to the West Coast of South Africa fueled his fascination with the sea.
At the age of 19, Johann moved to Cape Town, where he pursued his interest in the maritime industry, earning his Yacht Masters Coastal qualification at the end of 2020. However, the global pandemic led him back home, where he shifted gears and earned a barista qualification. From March 2021 to November 2022, Johann honed his hospitality skills working at a coffee bar, while keeping his passion for cooking alive.
In 2023, Johann took a bold step in his culinary career by enrolling in the South Africa Chefs Academy in Woodstock, Cape Town. Following an intense 3-month internship at the renowned fine dining restaurant La Colombe—voted among The World's 50 Best Restaurants in 2023 and 2024—he gained invaluable experience working alongside exceptional chefs who taught him the art of French and Asian fusion cuisine.
With his newfound culinary expertise, Johann set his sights on the yachting industry. In March 2023, he flew to St. Maarten, starting his career as First Mate/Chef with Tradewinds Charter Catamarans. His initial training took place in the British Virgin Islands onboard a 60ft Fountaine Pajot Catamaran. Soon after, he was stationed in Saint Vincent and the Grenadines, where he spent 15 months chartering through the idyllic islands of Bequia, Mustique, Canouan, Tobago Cays, Union, and Carriacou. The authenticity of these less-industrialized Caribbean islands, paired with their local ingredients and culture, inspired Johann’s approach to cooking and expanded his culinary palate.
During his time in the Caribbean, Johann developed a love for the ocean, becoming a certified PADI Rescue Diver. Whether leading sailing excursions, preparing gourmet meals, or exploring underwater landscapes, Johann’s adventurous spirit shines through in everything he does. He’s worked on various yachts, including the company’s flagship 70ft Fountaine Pajot, offering guests an unforgettable combination of sailing, diving, hiking, and culinary experiences.
Driven by his passion for food and travel, Johann continues to seek out new cuisines and explore the world, always eager for his next adventure both in the kitchen and on the water.

Karyn and I have had a fabulous week – a trip of a lifetime from our bucket list for sure. Stacy and Kyle have done a super job of listening to our requests and making them a reality – tailoring our destinations and meals to more than meet our needs. Stacy's fresh from scratch cooking has been extraordinary. We've been treated like a king and queen. Kyle met our request for out of the way snorkeling destinations. You guys were the perfect duo and no one else could have done what you guys did. My husband and I and 2 other couples went on an amazing 3 night, 4 day cruise the on Let’s Play Two last month. I highly recommend this trip or one even longer!!! Captain Kyle is amazing! His positive energy is infectious and his skill level as a Captain in top notch! He made everything fun while still having safety always on his mind. From the hammock on the back of the boat, to the clear bottom kayak and all the other fun floating things there was always lots of fun things to do! He knew the best spots to go, snorkeling or private beach’s to just hangout! He even brought the cooler to the beach for us! He is truly one of the nicest most thoughtful people I have ever had the pleasure to meet!Chef Stacy is amazing as well!! I still think about her Breakfast Taco’s to this day!! Not to mention her homemade Bloody Mary mix!! The freshness of her meals and her knowledge of the Virgin Islands really completed this great trip! Her and Kyle worked really well together to see to our every need.

What was the most memorable highlight of your yacht charter vacation? Hard to put down just one- the food, sunset hike/picnic over Waterlemon Bay, scuba at Mingo Cay and the Ledges.
Any additional comments you would like to make regarding your vacation experience? It was a fantastic experience. The perfect trip to celebrate our daughter’s graduation. Capt Cory and Chef Emily were wonderful. The food was fantastic-every meal we were impressed with Chef Emily’s creativity and skill. Lisa is having some issues with gluten. Emily went above and beyond in creating meals that Lisa could eat- and they were 5 star. My daughter, Anna, said before the trip that one of the things she was looking forward to was the food- she was not disappointed.
We loved the scuba. We are newly certified divers and they made us feel comfortable and safe. We appreciated Capt Cory giving us an itinerary based on his experience- he didn’t disappoint. The trip was perfect for us- we were content to spend time on the boat relaxing/reading while also spending time snorkeling, hiking, scuba, etc. We would definitely sail with Capt Cory and Chef Emily again.

Emily you are an awesome yoga instructor, nurse, snorkel guide, hostess, paddleboard instructor, an amazing chef and 1st mate. Cory, a passionate sailor, fishermen, lobster catcher, bartender as well as an exceptional host. The Euphoria is an amazing vessel and well cared for by you both. Thanks for making our trip amazing, the meals were exceptionally delicious and the service was over the top. Can't wait for future voyages with you both! Favorites: Eating & Drinking, Lime Out & feeding the fish, Windmill Bar & Sunsets, Cory tending to the sails with his toes, snorkeling, yoga & pilates, the stars, smells from the galley, sunset views.

I don't think I've ever been so excited to see two people I had only known for a week, and this has been the BEST WEEK EVER!! Every single day was perfection, beginning with the most magical & amazing engagement I could ever dream of. We have truly enjoyed spending every day of our vacation with you two (and your top- notch food and service). Things we loved: tacos @ lime out, lobster everything, catching & eating our first Wahoo, giving Cory a hard time about the mahi, massages, water island, boat & float concert, drinks in Christianstead, dancing after dark... We have too many words to say about this wonderful week, it was perfect. I wanted to spend time with my kids, alone, without interruption before they leave the nest for good, and it was heaven! Getting to know you two was icing on the cake. I have memories of this week that I will carry with me always. After the last year and a half we all needed to reset, recargue and refocus. Euphoria gave us the safe haven we all needed. With you all, I felt so safe and protected from everything which is what we needed.I will carry Euphoria, Emily & Cory in my heart always. I will never forget this time and I cannot wait until next time. I didn't even have time to mention the FOOD! OMG, the BOAT! Amazing. The most comfortable boat imaginable.

This has been a trip of a lifetime for our family! So many firsts for our kids from water skiing to knee boarding, catching 2 huge mahi all while sailing through paradise. It has als been such a relaxing week for me and Graham which is hard to come by when traveling with 4 kids. Words can’t express how much we appreciate all you two have done for us this week. Emily- The food you lovingly prepared for us all week has been amazing. We are all a few pounds heavier! Cory- the martinis have been the ebay I have ever had! And you have been so fun with the kids, taking them tubing, skiing, wakeboarding, etc.. What fun to celebrate new years with you and an early birthday celebration for Ry and Graham. Thank you for making all these special memories for us! I could go on but the kids want me to leave room for them. You two will be in our hearts forever and we will definitely stay in touch and see you again! Thank you again for this incredible experience!I try to center our life around little moments that create big memories! You both have impacted our lives and I hope we have done the same for you. As we continue to write our family story, we will look to add more more moments/ memories and find a way to plan Part II! Until our next sail together!
Thank you so much for the fun and joy you have brought to us. You made every minute special and fun whether it was an amazing meal, or getting thrown off the tube. You helped make so many amazing memories for us over the week and I had so much fun! Turtles, water skiing, snorkeling, shell hunding, sailing, new years ball drop, and even cheese touch wouldn’t have been possible without you guys. You helped me forget about my stressful life back home with gym & school and remember that there is more than that & there is so much adventure out there. So thank you for all the amazing things you helped us do this trip. We will be back soon! We’ll miss you, keep being the best charter out there!

You guys have done more than I thought 2 people were capable of, and we were able to feel like our lifelong friends. Thank you so much for curating such an outstanding trip, fit with meal after meal of delicious food, awesome scuba dives and incredible water activities/ hikes, we loved being whisked from thing to thing without a moment of boredom! It was great having such knowledgeable and talented individuals at the hel0, and I so enjoyed hearing all your stories throughout the trip.
So when we booked this trip I really didn’t know what to expect. I figured epic family vacation. This cruise and crew shattered my expectations. Gorgeous aqua water, gourmet meals & snacks, I give it an 11/10. I’m so gonna miss this!

Loved everything you did to make this week joyful and special, from the secret lobster holes to the fabulous food to the Christmas caroling from the tender. Here’s what we loved about this trip: Mom- The Food! (Ribs), lameshur day, sunsets & snorkeling. Dad- Sunrise & sunsets, Food! Amazing meals, great sunning sports & the best happy hours. Kids- Snorkeling, sleeping on the boat, swimming, boat jumps, tubing, kneeboarding, desert!Thank you again for being such great hosts, we loved being on charter with you and all that came with it.
