    Grilled Beef Burger with Coleslaw Sauce & French Fries

    Juicy, flame-grilled beef patty served on a toasted bun, topped with crisp lettuce, tomato, and a creamy coleslaw-style sauce for a tangy crunch. Paired with a side of golden, crispy French fries.

    Seafood Paella

    Blackened Mahi Mahi with Ratatouille & Polenta

    Spice-rubbed mahi mahi, pan-seared to a crisp finish, served atop a rustic Provençal ratatouille and creamy polenta.

    Coconut Curry Chicken with Rice

    Tender chicken simmered in a fragrant coconut curry sauce with hints of ginger and garlic. Served over steamed basmati rice. 

    Pan-Seared Salmon with Cauliflower Steak & Emmer Wheat

    CAPTAIN: Giacomo Boetti (Captain Jack)
    CHEF/FIRST MATE: Nicole Giubilo

    Born into a sailing family and growing up on boats with his father as a professional skipper for over 30 years, Giacomo was immersed in maritime life from a young age, gaining hands-on experience and developing a natural intuition for the sea. His career has taken him from
    deckhand roles to captaining yachts both in the Mediterranean and in the British Virgin Islands. Calm, confident, and highly skilled, Giacomo ensures a safe and seamless journey while sharing his love of sailing with every guest on board.

    Nicole brings warmth, precision, and Mediterranean flair to every meal she creates. Since 2022, she has worked as a yacht chef in both the Mediterranean and the British Virgin Islands, drawing inspiration from each destination, to craft vibrant gourmet dishes. Nicole’s sunny personality makes her a joy to be around and her creative spirit shines through in her cuisine. When they’re not delighting guests, Giacomo and Nicole share a love for outdoor adventure. Whether it’s snorkeling vibrant reefs, hiking scenic trails, or surfing hidden coves, their enthusiasm for nature adds a vibrant, personal touch to every trip.

Truly One For The Books

We had an absolutely unforgettable week chartering in the BVI on Aquanimity, and so much of that was thanks to Captain Giacomo and Chef Nicole.

Jack planned the perfect island-hopping itinerary—every day felt like a new adventure. From swimming with sea turtles to exploring caves, snorkeling beautiful reefs, paddle boarding, to exploring The Baths by ourselves and even dinghy surfing, he made sure there was something exciting for everyone. What really stood out was how he found stunning, quiet anchorages each night, away from the crowds—each spot somehow more beautiful than the last. He also took the time to teach our family about sailing, and showed our younger son how to fish and snorkel.

Nicole kept us incredibly well fed all week with truly outstanding meals. From homemade lasagna to an incredible sushi night (complete with fresh rolls made right on the boat), to homemade bread and cake—every meal felt special. I’m still dreaming about the French toast and lava cake! The variety, quality, and care she put into every dish were beyond anything we expected.

Beyond their skills, Jack and Nicky are simply wonderful people to spend time with. Traveling with two tween/teen boys isn’t always easy, but they were endlessly patient, kind, and fun. Jack spent hours pulling the boys on paddle boards with the dinghy, and the sound of their laughter and excitement is something I’ll never forget.

This trip was truly one for the books, and we are so grateful to Giacomo and Nicole for creating such a magical experience. We would sail with them again in a heartbeat.
