MEET YOUR CREW:
CAPTAIN: Joe Carew-Bourke
CHEF: Josh Daries
STEW/DECK HAND: Georgie Bark
Joe was born and raised in Auckland, New Zealand, Captain Joe spent every spare minute on the water aboard his family’s small powerboat, water-skiing, fishing, and developing a lifelong love for the ocean. While completing a civil engineering degree, a sailing holiday to Croatia unexpectedly turned into a job for the remainder of the season. After several years balancing a traditional career with every opportunity to return to sea, he committed to professional sailing in 2018. Since then, Joe has worked extensively throughout Greece, Croatia, Spain, and the Caribbean, delivered yachts across Europe, and logged more than 60,000 nautical miles. His experience includes six transatlantic crossings and one Pacific crossing. He holds an RYA Yachtmaster Ocean certification and brings calm, capable seamanship to every passage. Away from the helm, Joe channels his endurance-sport mindset into running a smooth and upbeat program onboard. He has completed multiple marathons and Ironman triathlons, bringing the same focus and determination to life at sea. Joe is also handy behind the bar and grill, happily preparing sunset cocktails or firing up a beach barbecue to make the day’s finale as memorable as the sail.
Georgie grew up in the United Kingdom, sailing aboard her family yacht and racing dinghies. She later became an assistant dinghy instructor and spent a summer in Cape Cod working as a sailing counsellor. Georgie went on to work as a flotilla hostess, where she met Joe, and later honed her hospitality skills during a winter season hosting guests in the Alps. Since then, she has sailed aboard a variety of vessels alongside Joe, serving as stewardess and mate. With a sharp eye for detail, strong organizational skills, and a genuine passion for guest care, Georgie excels at creating a seamless, welcoming onboard environment. Friendly and attentive, she brings an easy warmth to interior service while remaining fully confident assisting on deck during maneuvers and passages. When she is not busy in the interior or on deck, Georgie enjoys photography and capturing candid moments at sea, giving guests a beautiful collection of memories to take home from their holiday.
Josh is a professionally trained South African yacht chef with close to two years of experience aboard private and charter yachts ranging from 80 to 175 feet.
Josh has served as sole chef aboard Notorious and Perfect Sense, preparing meals for owners, charter guests.
His culinary foundations were developed at renowned establishments including The Waterside by the La Colombe Group in Cape Town and Constance Prince Maurice in Mauritius. While in Mauritius, Joshua gained experience in French and Asian fine dining and worked alongside Michelin-starred chefs Régis Marcon and Patrick Bertron.
Calm, organised and adaptable, Josh combines fine-dining technique with strong time management, communication and teamwork.
I have had the pleasure of having Chef Josh chef for us aboard our yacht and I can recommend him without hesitation. Josh is an excellent chef who consistently prepared delicious, creative meals while being attentive to our preferences and very easy to work with.
What was especially impressive was that, with eight other owners of the yacht, every one of us came away with a very positive impression of Josh both as a chef and as a person.
He was professional, personable, organized, and comfortable working in the unique environment of a yacht and we would all be very happy to have chef for us again.
